Dealcoholized wine

Dealcoholized wine begins as a classic wine: harvested, fermented, and aged. Only then is the alcohol removed – usually through vacuum distillation or reverse osmosis. The crucial factor is preserving the volatile aromatic compounds.

In vacuum distillation, the pressure in the tank is reduced so drastically that alcohol evaporates even at low temperatures between 30 and 40 °C. Some of the delicate, heat-sensitive aroma compounds can be preserved in the process, or collected beforehand and subsequently added back in.

Reverse osmosis separates alcohol and water using membranes, allowing for more precise control over body and acidity. What remains is wine in its original structure – with acidity, texture, and origin, but without the intoxication.

OUR PERSPECTIVE

In the glass, i am not full's SPARKLING ROSÉ shines with an enticing rosé color and orange highlights. The first sip reveals aromas of ripe apricot and sweet strawberry, accompanied by a hint of orange peel and the scent of yeast dough. The lees aging of the base wine contributes to its full-bodied character.

I'm not full - Sparkling Rosé BEHIND THE SCENES

PRODUCTION

This blend of Müller-Thurgau and Regent grapes comes from the Palatinate region and ages for approximately three months on the fine lees – for structure and a delicate creaminess. The wine is then gently dealcoholized using vacuum distillation to preserve its subtle fruit aromas. A careful addition of carbon dioxide gives it its lively freshness.

Christopher Full from Mölsheim, at the border of Rheinhessen and the Palatinate, has been developing his own line of distinctive non-alcoholic wines for several years. As cellar master at Battenfeld-Spanier and Kühling-Gillot, as well as at his own winery, his guiding principle is: the sensory standard remains the same – and you can taste it.
