Cul Sec L’Étable Fumé Orange 2025 is a non-alcoholic wine proxy from the Netherlands, inspired by orange wine. Grape skins are extracted in fermentative solutions and then blended with grape and pear juice as well as herb and wood infusions.

Wine Proxy

Proxy wines are not dealcoholized wines – and don't want to be seen as wine. They are independent compositions: inspired by wine, but reimagined. Creation instead of withdrawal.

Their complexity arises from fermentation or distillation – sometimes through kombucha or lacto-fermentation, sometimes based on water kefir or other controlled microbial processes. Added to this are tea infusions, juices, fruit extracts, herbs, or spices, which combine like building blocks to create multi-layered structures. The result: a beverage that, in structure, depth, and aroma, is reminiscent of wine – often entirely without grapes.

The focus is on acidity, texture, tannins, and length, supported by a fine balance and controlled sweetness. The best proxy wines can do what great wines can: accompany food, unlock aromas, stimulate – and tell their own story.

OUR PERSPECTIVE

An orange proxy with a twist: Viognier and Sauvignon Blanc from the Ardèche meet Bacchus from Kitzingen in Franconia. After pressing, only the skins, not the juices, come into contact with kombucha – to gently extract tannins and aromas. A herbal infusion blends with blood orange and pear. Dry on the palate, with noticeable phenolics, subtle bitter notes, and a hint of oak – vibrant, complex, and made for anyone drawn to orange wines.

PRODUCTION

Viognier and Sauvignon from the Ardèche region, as well as Bacchus from Kitzingen, are gently pressed; the skins macerate cold in carefully controlled fermentation processes to develop tannins and delicate bitter notes. Oak infusions add warm, umami-rich accents (mushroom, chamomile) without overpowering the wine. Finally, the cuvée is blended and gently carbonated for a fine, persistent perlage.
