AMA Jasmine Silver Needle No. 5 is a low-alcohol sparkling tea with 1.5% ABV from the Basque Country. It is fermented from Jasmine Silver Needle white tea and is also considered a Pet Nat Tea due to its naturally occurring perlage.

Pét-Nat Teas are naturally sparkling compositions that incorporate traditional sparkling wine production techniques. Finely effervescent, with a very low alcohol content, yet deep and expressive – drinks that gain character over time.

Their base consists of selected teas, herbs, and botanical elements, composed according to structure, texture, and origin. Infused with pure spring water, the leaves, blossoms, and spices unfold effortlessly – clear, precise, and multifaceted.

The heart of this method lies in the fermentation process: a symbiotic culture of bacteria and yeasts transforms sugar into carbon dioxide and subtle acids, reduces sweetness, and creates complexity. Afterwards, the tea rests – often for months, sometimes years – in the bottle to develop depth, tension, and harmony.

OUR PERSPECTIVE

Something within me resonates so strongly with AMA that I feel an incredibly deep connection. I remember the first time I had the Jasmine tea in my glass (back then still as a BOST in a different design) – I couldn't stop burying my face in the glass. On the nose, I find a finer reduction – reminiscent of flint and gunpowder – which I've always loved in wine. It's reminiscent of natural wines from the Jura or Styria. Aromatically, the finesse and fragrance of the white Jasmine Silver Needle tea come through clearly, without much distraction. I love this tea, and I love it fermented in such a purist way, as AMA presents it in the glass.

AMA - Jasmine Silver Needle BEHIND THE SCENES

PRODUCTION

AMA No. 5 Jasmine Silver Needle begins with spring water from the Basque Country and Jasmine Silver Needle tea from Fuding (Fujian). For this variety, the most tender spring shoots are harvested, and the tea is infused with fresh jasmine blossoms for six consecutive nights – each morning, the previous day's blossoms are removed and replaced with fresh ones. The tea infusion is then subjected to natural fermentation with yeast and bacterial cultures. Afterward, No. 5 can continue to mature in the bottle until 2030. Over time, the effervescence becomes finer, the texture smoother, and the expression gains depth; the lees can be poured over the tea or left in the bottle.
